Job Description:
This entry level position routinely trims and prepares primal cuts of beef for future proportion cutting. This position requires multiple tasks such as identifying using a knife to trim beef off of bones and prepare beef trim to be ground and packaged. Additionally, the position is responsible for boning and trimming cuts from larger cuts of beef and overseeing the beef material put into a grinder to produce ground beef. In this position it is important to quickly and efficiently trim, and bone out beef according to company specifications, quality standards, in a manner that maximizes product yield and final quality of the product. This role will be supervised by a more experienced cutter and will be taught the methods of beef carcass cutting. This position requires a desire to learn and grow their beef cutting skill set. Additionally, it is necessary to pay attention to details, endure adherence to safety and sanitation protocols, and the ability to work efficiently in a fast-paced, and cold environment.

Job Duties and Tasks:
Cut, trim, bone, and grind beef trim cuts
Ensure a balance between speed and quality to create efficiency
Operate knives safely and efficiently
Inspect meat products for quality, freshness to achieve company standards
Minimize beef trim loss and maximize production yield
Follow all occupational health and safety procedures according to (HACCP)
Keep all work areas clean and efficient
Ensure products are organized and counted
Clean equipment and work area at the end of the shift
Participate in ongoing training and continuous improvement
Job Requirements:
Proven ability to safely and effectively use a knife
Accurately cut and weigh beef products to specification
Able to lift objects over head
Able to stack and move large boxes (60lbs.)
Ability to push or pull a pallet jack loaded with beef product
Responsible for keeping clean and tidy work area
Able to read (English) and follow cut sheet instructions
Responsible for cleaning knives, saws, cutting tops, floor and work areas
Able to use math and counts to accurately complete the desired cut sheet
Able to work with hands to quickly grab and manipulate beef products
Shows control and precision to increase beef yield
Shows detail orientation in identifying cleaning issues or corrections needed
Communicate well with team members to ensure products are completed at a proper pace
Works well with team and supervisor to meet production schedule and requirements
Qualifications:
Meat cutting, food processing, or food industry experience, a plus but not necessary
Stamina to lift, move, push and pull through out the day
Interested in learning beef carcass anatomy, a plus
Able to work effectively and efficiently with your hands
Enjoys being organized and ensuring accuracy
Must be reliable, show up on time, and desires growth and opportunity
Strong attention to detail and commitment to product quality and safety
Work Environment:
Fast-paced work environment handling and cutting raw beef loins and beef parts
Climate-controlled environment at approximately 45 degrees F
Adherence to Hygiene standards such as hair nets, gloves and clothing covers, etc.
Active position requiring use of hands to handle products, boxes and beef cuts
Requires standing, moving, bending lifting, repetitive motions, and active work
Works with a team in a highly productive environment
Communicate effectively with team and management
Comprehends and effectively communicates in English
Goal oriented and high output and focus is central to success in the role
Dependable and reliably shows up on time and completes daily tasks
Adaptable and flexible when required
Use of logic to reduce product yield loss while maintaining high quality standards
Maintain a clean and sanitized work area based on HACCP sanitation guidelines
